“門外不出”こだわりのかえし

「名前を明かしてはいけない」福岡の醤油醸造の蔵元と共同開発したかえし。その素材にも日本の“厳選食材”がふんだんに使われている。北海道日高産の昆布、鹿児島県枕崎産の鰹節などの極上食材と、アミノ酸を多く含む秘伝の醤油をブレンド。濃厚なスープと合わせてもその旨みは消えることなく、極上の一杯へとまとめあげる。

An elaborate sauce with a “must not be revealed” secret

The sauce was developed jointly with a soy sauce brewer company in Fukuoka that is kept strictly private and confidential. Raw ingredients are also abundantly using “Carefully Selected Ingredients” gathered from all around Japan. The sauce is mixed with a secret soy sauce, high in amino acids, made with fine-quality katsuobushi (dried bonito) from Makurazaki (Kagoshima Pref.) and kombu (edible kelp) from Hidaka (Hokkaido Pref.)
The “Umami” (savoriness) does not fade away when the sauce is mixed with the dense soup, bringing in together the dish to a first-rate one.

極上の“泡スープ”の秘密

国産豚を贅沢に、長時間炊き上げる。手作業での丁寧な下処理 と部位に合わせて使い分ける3つの寸胴、骨がとろけるまでかき混ぜ続ける。全てが調和した時、泡が現れる。この美味しい“しるし”は骨の髄まで抽出された旨みが凝縮された証。創業以来、一度もその火を止めていない一瑞亭の命ともいえる泡スープが、極上の一杯を創り上げます。

The Secret of the First-rate “Bubbles Soup”

The domestic pig is cooked for hours and in a generous quantity. The soup is prepared by carefully hand-mixing bones in three different stockpots, each for different body parts, until they melt completely. Once the mixture is ready, bubbles will appear. This “sign” of tastefulness is the proof that the Umami (savoriness) was extracted from the marrow of the bones and condensed afterwards. The fire used to prepare this bubble soup, the “Life” of Issuitei, was never turned off since the creation of the shop. The soup will bring to you a first-rate Ramen dish.

最上級の国産小麦にこだわる理由

博多ラーメンの特徴的な細麺は、濃厚な豚骨スープに負けずに小麦の香りを立たせるのが難しい。国産の最上級品を使い、加水を極限まで抑えた「めんたい熟成」という特殊な製法を用いることで、小麦本来の風味が楽しめる、博多らしいざっくりとした食感を実現。歯切れの良い細ストレート麺は、一瑞亭の泡スープが絡む、最高の相性。

The Reason why only the Finest Domestic Wheat is Used

It is difficult for the wheat flavor of Hakata Ramen’s distinctive thin noodles not to be outdone by the dense Tonkatsu soup. By using highest-grade ingredients and a special method called “Mentai Nessei” to add water up to the limit, it was made possible to enjoy the authentic taste of wheat and the typical Hakata’s “rough texture”. The crisp, straight thin noodles and the Issuitei bubble soup are a perfect match for each other when mixed-up.

自家製へのこだわり

具材は引き立て役。しかし、こだわり抜いた麺やスープの美味しさを最大限に生かすため、具材にも手を抜かないことが創業者の約束。国産豚を丁寧に炊き、味の決め手となる秘伝のタレと絡める。もっちりと柔らかい豚本来の美味しさを引き出す独自の製法は企業秘密。焼豚が、主役の麺とスープをさらに引き立て、日本の”厳選食材”を集めた一杯がここに完成する。

A Commitment to Home-made Quality

Ingredients serve as a foil. However, in order to make the most of the uncompromisingly delicious taste of the noodles and the soup, the shop founders made the promise to never cut corners with ingredients. Domestic pig is carefully cooked and mixed together with a secret sauce that determines the final taste. The original cooking method used to bring out of the original flavor of the soft and chewy pork meat remains a company secret. The CHAR-SIU enhances the taste of the noodles and the soup, the two main actors, and completes a dish made from “Carefully Selected Ingredients” gathered throughout Japan.
